Spam Fried Cauli Rice

If this isn’t a fridge/pantry cleanout meal – we don’t know what is. Fun fact: did you know Spam hails from Minnesota? Like many others, we grew up eating this on the regular with rice and eggs. This ketofied version swaps out rice for cauli-rice and still tastes just as good.

Spam Fried Cauli Rice

Ingredients

  • 1 bag frozen cauliflower (riced and fully cooked) we like the Green Giant brand, it's about 3 cups.
  • 2 tablespoons avocado oil
  • 1 can spam (cubed)
  • 1/4 cup onions (diced)
  • 2 eggs (whisked)
  • 1/4 cup green onions
  • 1 tsp Golden Monkfruit sweetener
  • 1/2 tsp garlic powder
  • soy sauce (to taste)
  • cracked black pepper (to taste)

Instructions

  • In a medium hot pan, add the 1 tbsp oil and whisked eggs. Scramble the eggs and remove them from the pan.
  • Add the second tablespoon of oil to the hot pan, cubed spam, green onions, garlic powder, and white onions. Saute until the onions are fragrant and spam starts to crisp up. This should take about 3-4 minutes.
  • Add the eggs back into the pan and mix in the cooked cauliflower rice. Add a dash of sweetener and soy sauce to taste. Stir fry until the ingredients are incorporated with one another.
  • Add black pepper and give the fried rice another stir.
  • If you prefer a drier cauli rice, continue stirring the fried rice on medium heat to let the moisture from the cauliflower rice evaporate.

Ingredients

  • 2/3 cup almond flour
  • 1 tbsp coconut flour
  • 1 tsp vanilla extract
  • 1/4 cup milk of choice
  • 3 tsp baking powder
  • 3 eggs
  • 3 tablespoons Golden Monkfruit sweetener (+ additional sweetener to taste)
  • 1 dash salt
  • 1/2 cup blueberries
  • For the glaze
  • 1/4 cup powdered sweetener
  • 1/2 tsp vanilla extract
  • 2 tbsp milk of choice

Instructions

  • Preheat your oven to 350 degrees F.
  • Mix wet ingredients thoroughly (extract, eggs, milk).
  • Add dry ingredients to the wet mix (almond flour, blueberries, coconut flour, baking powder, sweetener, salt.
  • Pour onto donut molds and place them into the oven. Bake until the top of the donuts are a light golden color.
  • Mix the glaze ingredients and top the donuts once they have cooled.

These are a remix of our OG Chocolate chip pudding cookies. The recipe is so versatile that there are endless possibilities.

Ingredients

  • 8 tbsp salted butter
  • 1 egg
  • 1 tsp pistachio extract
  • 1 tbsp baking powder
  • 1/3 cup sugar free white chocolate chips (use KETOBAES to save $ at ChocZero)
  • 1 box sugar free pistachio instant pudding (1 box is 4 servings of pudding)
  • 3/4 cup almond flour
  • 1/3 cup Swerve Brown Sugar Replacement

Instructions

  • Use a hand mixer or thoroughly mix the butter, egg, vanilla, and sweetener.
  • Add baking powder, almond flour, chocolate chips, and instant pudding mix to the butter mixture and continue mixing until everything is incorporated.
  • Use a small cookie scoop or tablespoon to portion out the cookie dough onto a baking tray. Pro-tip: line the tray with parchment paper for easy clean up.
  • Use a rubber spatula or your fingers to slightly flatten the dough as it will not flatten like a flour/sugar cookie.
  • Bake the cookies at 350 degrees between 5-10 minutes depending on your oven. I use a toaster oven, so the bake time will vary for you. The cookies are ready as soon as you seen any golden color to them. You don’t want them to be golden all over as almond flour can burn quickly.
  • Let them cool completely before eating!

This is the closest that we’ve gotten to an actual bowl of oatmeal and we are loving it. This base is so easy to to make and you can really make it your own with different extracts and mix-ins. This is a mix between cream of wheat and oatmeal but based on how you season and tweak it, could be a very good dupe for grits.

Vietnamese Style Grilled Baby Back Ribs

This is my all-time favorite rib marinade for Vietnamese style ribs. Something to note about asian style ribs is they are not low and slow – they are rapid fire grilling so the meat will not be fall off the one – still delish though.

Mom’s Vietnamese Style Curry Chicken (Ca Ri Ga)

This is one of my favorite dishes my mom makes and hits the spot every time. It’s great with toasted low carb bread or served over cauli rice or keto-friendly noodles. You could honestly serve this to carbies because the biggest swap is monkfruit sweetener for sugar.

Ingredients

  • 2 pounds chicken (I like wing pieces or boneless/skinless thighs)
  • 1 tablespoon garlic (minced)
  • 1 tablespoon curry powder
  • 2 tablespoons Maeploy red curry paste
  • 1/2 cup frozen carrots and peas
  • 1/2 cup coconut milk
  • 1-2 cups water
  • 1 tablespoon fish sauce
  • 4-5 Thai Chili Peppers
  • 2 tablespoons Golden Monkfruit sweetener
  • 4 bay leaves
  • salt & pepper
  • 2 tablespoons avocado oil

Instructions

  • Heat the oil on medium high heat and add the garlic to the pan while the oil is still heating.
  • Once the garlic is fragrant, add the chicken and curry powder. Brown the pieces (they do not need to be cooked all the way through yet).
  • After about 5 minutes, add the red curry paste, coconut milk, water, fish sauce, thai peppers, peas/carrots, and sweetener.
  • Continue cooking for another 15-20 minutes or until the chicken is cooked all the way through.
  • Five minutes before serving, add the bay leaves and salt/pepper to taste.

  • Cut small bite sized pieces of boneless skinless chicken thighs (about 1 pound, I had 6 thighs in my package). Mix them with one egg, a tablespoon of garlic powder, teaspoon of salt, and teaspoon of pepper. Add one tablespoon of any kind of milk.
  • Add about one cup of @isopure whey protein powder (UNFLAVORED, not natural, people) and mix it around to coat the chicken. I GRADUALLY added the protein powder as I mixed and the powder settled/got stuck to the bottom or side so this step is dependent on how it sticks to the chicken.you could likely use less for sure. There just needs to be some sprinkled on the chicken for there to be a crunch. It shouldn’t be a sludge like batter though. Like a wet dusting, if that makes sense.
  • Drop the “battered” chicken one piece at a time in hot oil (375 degree oil) – cook for at least 3 minutes but just take it out when it’s crispy enough for you.
  • While the chicken is cooking, heat a skillet on low and mix equal parts sugar free orange marmalade, soy sauce, & monkfruit sweetener. Then add ginger powder, garlic powder, and crushed red pepper to taste. Stir the sauce and then add a tablespoon of water because it thickens fast.
  • Take the chicken out and put it in a bowl. Pour the sauce over it and then place another bowl on top and shake it!! Serve with a side of steamed broccoli.
