David’s Crack Chicken

Y’all, this one was never meant to be published but due to popular demand, we are going to forever keep this alive on this website. Did you know that David is the primary cook in this household? I just make the keto stuff but he actually does everything else. This recipe is for his famous crack chicken – it’s so good you don’t want to stop eating it. We used to eat it with a bowl of white rice, but this is perfect with cauli rice or mixed veggies. It’s even good by itself. It’s sweet, salty, spicy, and everything in between.

This recipe tastes best with dark meat chicken or wings, but you do you boo boo!

Instructions

  • In a mixing bowl, coat the chicken thighs with oil.
  • Mix all of the other ingredients together and then pour them over the chicken thighs.
  • Mix well to coat all of the chicken thighs.
  • Let the chicken marinate for 30 minutes.
  • Air fry OR bake the chicken for at least 15 minutes at 375 degrees.
  • Remove the chicken once it's cooked all the way through! Enjoy!

Zero Carb Pizza Crust

This one is a throwback to the days we all had to fend for ourselves before all of the keto-friendly products flooded the market. Most people use canned chicken but this one uses my least favorite part of rotisserie chicken – leftover white meat! I swear no matter what you try to do to make it juicy, it gets drier and drier by the second, which is why it’s the perfect “flour” for this zero carb pizza dough. You can use rotisserie chicken or any leftover skinless white meat chicken. The thinner you roll out the “dough” the crispier the crust will be.

Ingredients

  • 2 cups chicken breast (white meat, no skin, shredded – you can use canned chicken breast as well)
  • 2 eggs
  • 1/3 cup parmesan cheese (grated)

Instructions

  • Using cold white meat chicken, finely shred enough to make two cups. I used a hand mixer until it was super fine.
  • Mix the shredded chicken with the eggs and parm.
  • Spread the mixture onto parchment paper and place another piece of parchment paper over the mixture. Use a rolling pin or bottle of wine to roll the dough until it is thin. Mine was as thin as your standard thin crust pizza. The thinner you roll it, the crispier it will be.
  • Air fry or bake the dough at 400 degrees for 10 minutes (until golden), flip the crust, and finish baking it for another 10 minutes (until golden).
  • Add sauce, mozzarella, and toppings and baking for another five minutes until the topping is melted and to your liking.

Mom’s Vietnamese Style Curry Chicken (Ca Ri Ga)

This is one of my favorite dishes my mom makes and hits the spot every time. It’s great with toasted low carb bread or served over cauli rice or keto-friendly noodles. You could honestly serve this to carbies because the biggest swap is monkfruit sweetener for sugar.

Ingredients

  • 2 pounds chicken (I like wing pieces or boneless/skinless thighs)
  • 1 tablespoon garlic (minced)
  • 1 tablespoon curry powder
  • 2 tablespoons Maeploy red curry paste
  • 1/2 cup frozen carrots and peas
  • 1/2 cup coconut milk
  • 1-2 cups water
  • 1 tablespoon fish sauce
  • 4-5 Thai Chili Peppers
  • 2 tablespoons Golden Monkfruit sweetener
  • 4 bay leaves
  • salt & pepper
  • 2 tablespoons avocado oil

Instructions

  • Heat the oil on medium high heat and add the garlic to the pan while the oil is still heating.
  • Once the garlic is fragrant, add the chicken and curry powder. Brown the pieces (they do not need to be cooked all the way through yet).
  • After about 5 minutes, add the red curry paste, coconut milk, water, fish sauce, thai peppers, peas/carrots, and sweetener.
  • Continue cooking for another 15-20 minutes or until the chicken is cooked all the way through.
  • Five minutes before serving, add the bay leaves and salt/pepper to taste.

Low Carb Chicken Nuggets

We didn’t choose the Nugg Life, the Nugg Life chose us. These are very similar to Tyson brand frozen chicken nuggets.

You can easily make these ahead of time and freeze them. They can also be air fried as well.

  • Mix 1 lb of ground chicken with a tsp of onion salt, garlic powder, cracked black pepper, and cayenne pepper.
  • Portion out balls (smaller than a golf ball)
  • Flatten the balls and dredge them in unflavored whey isolate protein powder, egg wash, and then pork crumbs.
  • Repeat until all the chicken portions are coated.
  • In a medium heat pan with oil, fry each side of the chicken nuggets until golden brown or fully cooked (about 3 mins each side).

Chinese takeout classic + wing night = pure magic. The great thing about this recipe is that the sauce can be used for whatever type of chicken your heart desires.

  • Cook chicken wings using your favorite method. I like to deep fry mine in 385 degree avocado oil until it is extra crispy.
  • In a saucepan, melt the butter on medium heat.
  • Add soy sauce (or Tamari/aminos), sambal, sugar free orange marmalade, brown sweetener (swerve is what I used), ground ginger, onion powder, sesame oil, and  garlic powder. Stir until the brown sweetener is dissolved.
  • Measure 1/4 cup water and mix xanthan gum with it. Pour half it into the mixture and stir – it will get thick fast. Pour the other half if you want your sauce thiccc.
  • Toss the chicken wings in as much sauce as your heart desires. Garnish with sesame seeds and scallions.

  • Whisk the eggs with milk and a tsp of salt. Throw the chicken into the liquid mix.
  • Heat oil to 375 degrees. In a separate bowl, mix pork crumbs, powdered sweetener, garlic powder, onion powder, 2 tsp salt, white pepper, cayenne pepper, and unflavored whey isolate protein powder.
  • Take the chicken out of the egg mixture, making sure to not have any excess egg. Lightly toss the chicken in the coating mixture and drop one by one into the hot oil for 3-4 minutes.

Wilde Jalapeno Chicken Chips Review

I think it’s safe to say that a lot of us have a love/hate relationship with carbs. We love to eat them but we hate how sometimes the bad carbs can make us feel. One of my biggest weaknesses when it comes to carbs is eating chips. I literally cannot say no to a bag of chips. There’s something about the crunchy, salty, oily combo that throws me off any type of diet wagon…EVERY TIME. Queue Wilde’s Chicken Chips. I walked past the display at Whole Foods and was like W(here’s)T(he)F(ood) I gotta try these. Low carb, four flavors, three ingredients?!?! At first I was having low carb flashbacks of those Quest chips (*cough*so dry and felt like I was eating cardboard*cough*) but since I’ve made it a point to find the perfect low carb chip alternative, I just needed those in my life. Four dollars later, I popped open bag of these babies and tried the Jalapeno variety. First impression – loved it! It pretty much tastes like low fat deep fried chicken skin with a sprinkling of jalapeno to give it a kick. There’s a slight sweetness from the coconut oil it’s fried in so it’s a nice balance from the saltiness of the chicken skin and jalapeno. I don’t know if I could swap these for Lay’s Jalapeno kettle chips, but when I’m feeling fluffy and am trying to get my ass back into gear, I think these are going to be my new go-to.
