  • 8 slices pastrami (ham and corned beef work too)
  • 4 tbsp whipped cream cheese
  • 8 pickle spears
  • 1/4 cup pickled jalapenos

Instructions

  • Spread whipped cream cheese on each slice of deli meat.
  • Place the pickle spear at the edge of each slice of deli meat. Lay the jalapeno slices next to the pickle spear.
  • Roll each slice of meat.
  • Refrigerate until ready to eat!

No Bake Sugar Free Jello Pie

If you’re a fan of jello salad, then you’ll be fan of this pie. This is a major throwback to some retro desserts but it’s so darn easy to make and is no fuss with the no bake aspect. I used the shortcut method to set the jello which makes it even quicker to put together.

The texture of the filling is like a super fluffy mousse. Add any extra filling into mason jars to have a nice sweet treat the rest of the week!

No Bake Sugar Free Jello Pie

Ingredients

  • 1 package sugar free jello (I used strawberry for this one)
  • 1/2 cup chopped strawberries (optional)
  • 1/2 cup boiling hot water
  • 1/2 cup lukewarm water
  • Ice
  • 1 keto pie crust i used Diamond Pie Crust from Walmart. They have walnut or pecan options. You can make your own if you want to clean it up.
  • 6-8 oz Sugar Free Cool Whip (thawed) You can also make your own if you want to clean it up.

Instructions

  • Dissolve the sugar free jello powder in the boiling hot water until the powder is dissolved.
  • Mix in chopped strawberries (optional)
  • Fill a cup with the 1/2 cup lukewarm water and add enough ice to reach one 1 cup. Mix it into the dissolved jello mixture.
  • Whisk until the ice is fully melted.
  • Fold in the cool whip until all of the ingredients are thoroughly mixed.
  • Pour the mixture into the pie crust and chill until it's firm.

Review: Archer Farms Uncured Ham and Swiss Omelet Cups

New at Target! Does anyone else like to browse the aisles for new products on the regular? I feel like I’ve been doing that more than ever lately because quarantine had me in a little rut. David and I were at Target last week and picked these babies up – maybe they aren’t as new as I think but they are new to me and I haven’t really seen anyone else talk about these. 

So here are some precursors to this review – I do not like Starbucks Egg Bites and I am not a huge fan of the 3 Petit Lechons Brand of sous vide bites from Aldi/Specialty Grocery Stores. Costco and Target also see the ThreeBridge Egg Cup bites but I don’t think they have much flavor.

I didn’t have high hopes before trying but the ham and swiss combo sounded good. 

Here’s the run down: 

These are $4.49 for a box of 4 omelet cups. The cups are the size of mini cupcakes and come two in a pack. One box is one serving, coming in at 2g total carbs for the entire box – which is not bad at all, however, the portion is tiny LOL. You win some, you lose some, right?

These can be found in the frozen food aisle, next to the frozen breakfast items. You can order it for pick up at your local store as well. 

Prep: 

The omelet cups are frozen and do not require thawing to cook. You just remove the plastic and then pop them in the microwave for a minute and a half and then let them sit for another minute. 

Asian Mom Eggs

If you are Asian, there’s a good chance you’ve had this style of scrambled eggs at some point or another in your life. Something about the combo of fish sauce, eggs, and scallions is unbeatable and takes you back to a time when things were simpler. If you are not Asian but enjoy courses like Egg Fu Young, or changing up your egg game, this one’s a really great recipe to try.

How to Order the Keto Pink Drink + Matcha Cold Foam at Starbucks

We love to ketofy our favorite comfort foods and beverages so there’s something about being able to ketofy this Starbucks drink that makes it feel even that much better.

Here’s how to order:

“Hi, may I please get a Grande Passionfruit Iced Tea, no water, add light heavy cream, with 1-2 packets of stevia… and can you please top it with cold foam made with heavy cream, sugar free vanilla, and a scoop of matcha powder?”

They should be able to make this beverage request for you with no issues. They will point out that there is sugar in the matcha powder – so order based on your keto preferences. There is about 5g of sugar in one scoop of matcha powder. We eat and drink to fit our macros, so this works as a treat for us.

Ya’ll, when we first started showing people how to drink iced bulletproof coffee, everyone was hating and saying “there’s no way the butter can mix with cold coffee”. Trust us, when we want something, we’ll make it happen. The trick is to use a blender or hand mixer to mix the coffee with butter so it comes out nice and creamy. Bulletproof coffee is a high calorie drink meant to replace breakfast. It is supposed to keep you full while providing sustained energy. Make it your own by adding natural sweeteners and/or flavor enhancers.

Sugar Free Frozen Yogurt Bites

These little guys are so easy to make and they are even easier to grab and go in the morning when you’re running late for work but need something to eat while sitting in traffic…like I did this morning. This is a great way to get protein, probiotics, and some healthy fats into your diet. It’s also super easy to remix and make your own with all the different toppings and flavors available.

Sugar Free Frozen Yogurt Bites

These are so perfect on hot days – they are creamy and just the right amount of sweetness.

Ingredients

  • 2 cups greek yogurt (we like Fage 2% or 5%)
  • 1/4-1/3 cup powdered sweetener Swerve, Lakanto, or Sukrin are great
  • 2 tbsp half and half
  • 1/2 tsp Vanilla extract
  • mixed berries

Instructions

  • Mix the yogurt, sweetener, half n half, and vanilla. Taste and adjust the sweetness to taste.
  • Spoon the yogurt mixture into silicone molds. Mine held 1/4 cup in each cavity.
  • Top the yogurt with fruit. I topped mine with blueberries, sugar free honey (pyure brand), and some lemon zest.
  • Freeze for 45 minutes for the perfect texture. If you leave them in the freezer for an extended period of time (overnight or longer), let them thaw before eating for best results.

Super Easy Crepe Cake


This recipe calls upon the magic of crepini egg wraps – you know, those wraps you see at Costco and Aldi and are unsure how to use them but you buy them anyway. We were craving something sweet so David whipped together this super easy crepe cake that requires very little prep time and ingredients.

Some notes:

  1. We used the large crepini wraps that they sell at Costco – they are like the size of a frozen pizza.
  2. You can absolutely use the smaller, more conventional crepini wraps they typically sell at Aldi.
  3. No, these wraps do not taste eggy or like cauliflower.

Super Easy Crepe Cake

These are so easy to make it’s hard to call this a recipe.

Ingredients

  • 4 large crepini wraps
  • 1/2 cup heavy whipping cream
  • 1 tablespoon flavor extract of choice (we used pineapple but vanilla, almond, or banana would be delicious)
  • 1/2 tsp Golden Monkfruit sweetener
  • 1/4 cup sugar free chocolate chips (Use KETOBAES to save 10% on your purchase)

Instructions

  • To make the filling, pour heavy whipping cream in a mixing bowl and add the flavor extract and sweetener.
  • Using a hand mixer, mix the whipping cream for 1 minute. Taste the mixture and adjust sweetener to taste. If you are using a sugar replacement, such as monkfruit classic or swerve, start with 2 tablespoons and adjust from there.
  • Once you adjust the sweetness, continue mixing the whipped cream until it is thick – about 2 more minutes.
  • Place one crepini on a flat surface like a cutting board. Spread a layer of whipped cream on the crepini wrap. Add another crepini layer and then spread another layer of whipped cream over the second crepini layer. Add the third crepini and whipped cream layer. Add the fourth crepini BUT NOT another layer of whipped cream – yet.
  • Cut the crepe cake in half. Spread a layer of whipped cream to cover one of the top of one of the halves. Place the other half of the crepe cake over the half you just added whipped cream to – so you have 8 layers in total. Cut half cake in half one more time. Spread whipped cream over one of the halves. Place the other half of the crepe cake over the half you just added whipped cream to – now you have 16 layers.
  • Melt the chocolate chips in the microwave until they are a smooth chocolate sauce (20-25 seconds). Pour the chocolate sauce over the crepe cake.
  • Cut the cake in half for two slices.
  • Enjoy!
