David’s Crack Chicken

Y’all, this one was never meant to be published but due to popular demand, we are going to forever keep this alive on this website. Did you know that David is the primary cook in this household? I just make the keto stuff but he actually does everything else. This recipe is for his famous crack chicken – it’s so good you don’t want to stop eating it. We used to eat it with a bowl of white rice, but this is perfect with cauli rice or mixed veggies. It’s even good by itself. It’s sweet, salty, spicy, and everything in between.

This recipe tastes best with dark meat chicken or wings, but you do you boo boo!

Instructions

  • In a mixing bowl, coat the chicken thighs with oil.
  • Mix all of the other ingredients together and then pour them over the chicken thighs.
  • Mix well to coat all of the chicken thighs.
  • Let the chicken marinate for 30 minutes.
  • Air fry OR bake the chicken for at least 15 minutes at 375 degrees.
  • Remove the chicken once it's cooked all the way through! Enjoy!

  • Cut small bite sized pieces of boneless skinless chicken thighs (about 1 pound, I had 6 thighs in my package). Mix them with one egg, a tablespoon of garlic powder, teaspoon of salt, and teaspoon of pepper. Add one tablespoon of any kind of milk.
  • Add about one cup of @isopure whey protein powder (UNFLAVORED, not natural, people) and mix it around to coat the chicken. I GRADUALLY added the protein powder as I mixed and the powder settled/got stuck to the bottom or side so this step is dependent on how it sticks to the chicken.you could likely use less for sure. There just needs to be some sprinkled on the chicken for there to be a crunch. It shouldn’t be a sludge like batter though. Like a wet dusting, if that makes sense.
  • Drop the “battered” chicken one piece at a time in hot oil (375 degree oil) – cook for at least 3 minutes but just take it out when it’s crispy enough for you.
  • While the chicken is cooking, heat a skillet on low and mix equal parts sugar free orange marmalade, soy sauce, & monkfruit sweetener. Then add ginger powder, garlic powder, and crushed red pepper to taste. Stir the sauce and then add a tablespoon of water because it thickens fast.
  • Take the chicken out and put it in a bowl. Pour the sauce over it and then place another bowl on top and shake it!! Serve with a side of steamed broccoli.

Double Chocolate Chip Pudding Brownies

These keto friendly brownies are so good, you’ll be feeling bad about not doubling the recipe. The key to ON-POINT keto brownies regardless of the ingredients, is to under bake them so they come out fudgey. I will give you a general time frame to bake them but you’ll have to watch the the first time since we have different ovens/toaster ovens.

  • Melt the butter for 30 seconds in the microwave.
  • Add all of the remaining ingredients into a mixing bowl with the butter and whisk/mix thoroughly.
  • Transfer into a square baking pan.

Paffles (Pork Rind Waffles)

Hands down the best vessel for sandwiches when you’re trying to CUT THE CARBS but not the crunch. Paffles have a special place in our hearts because they have connected us to so many keto baes. We love seeing all of the variations in the wild. This is the OG recipe that came together when we were transitioning off the egg fast and into keto carnivore last year.

Some notes:

  1. We like using neutral tasting pork rind crumbs, like Aldi or Mac’s brand. Pork Panko is also a really great pre-made pork crumb product as well if you’re not trying to DIY everything.
  2. Our cheese of choice is organic valley brand mozzarella. It’s 1g total carb per serving or zero net carbs per serving.
  3. People have used other cheeses, such as cheddar, which we have been told helps it crisp up more – but the jury is still out on that.
  4. You do not have to include the garlic, but it helps mask any kind of pork essence.
  5. If you do not eat pork, try using fried chicken skins.
  6. If you make these and they are not crispy, thin out how you spread the dough onto the waffle maker and cook it longer.

  • Mix wet ingredients thoroughly (extract, eggs, milk)
  • Add dry ingredients to the wet mix (almond flour, coconut flour, baking powder, sweetener, salt, 2 shakes of cinnamon)
  • Pour onto a griddle or non stick skillet on medium heat. If you are not using the mini Dash griddle, flip when you start to see the mixture bubble. Each side should be golden. Use your first pancake to test out the time, as stoves and pans will differ – which will vary the cook time.
  • While the pancakes are cooking, mix the additional sweetener with 4-5 shakes of cinnamon.
  • Once the pancake is cooked, toss it in a cinnamon/sweetener mixture until both sides are fully coated.
  • For the dulce de leche cream cheese frosting, mix 2 tablespoons of whipped cream cheese with 2 tablespoons of your fav sf caramel syrup.

  • Portion out balls (smaller than a golf ball)
  • Flatten the balls and dredge them in unflavored whey isolate protein powder, egg wash, and then pork crumbs.
  • Repeat until all the chicken portions are coated.
  • In a medium heat pan with oil, fry each side of the chicken nuggets until golden brown or fully cooked (about 3 mins each side).

Triple Chocolate Noatmeal

This is a remix to our OG Noatmeal recipe and it’s seriously so good that it feels wrong.

Some answers to FAQs:

  1. Can I omit coconut if I don’t like it? Yes!! You do you and make it your own.
  2. Can I use something other than choc zero? Of course, we just like how smoothly it melts.
  3. What if I don’t like almond flour? Don’t use it – and just add a few tablespoons of shredded coconut or flax in place of the almond flour.
  4. Can I make this without chocolate? Yes! Use the base to make whatever flavor oatmeal you used to love. Just omit the chocolate.

DIY Hand Sanitizer

Coronavirus/COVID-19 is continuing to quickly spread across the world. Washing your hands is one way to help prevent the spread of this illness. Since allllll the stores are depleted of hand sanitizer, here is a simple DIY hand sanitizer to save the day. We are posting this because we are constantly on the go and so are many keto baes, so this will come in handy until the stores are able to catch up with demand. I used the ratios recommended by @popsci and @centersfordiseasecontrol:

Ingredients:
1 cup 91% isopropyl alcohol (CVS)
1/2 cup aloe vera (Whole Foods)
10 drops tea tree oil (Whole Foods)
Spray bottle (Target)

Thoroughly whisk all the ingredients together until they form a homogenous liquid. Use a funnel to portion out the liquid into travel friendly squeeze or spray bottles. Shake before using.
